You’ll be amazed at such an elegant dish with so few ingredients in so little time.

2 medium tomatoes
Salt and pepper to taste
¼ c. crumbled feta or shredded mozzarella cheese (1 oz)
2 tbsps chopped pitted ripe olives
1 tbsp chopped green onion
¼ c. Hickory Smoked Shredded Buffalo Jerky

Remove stem ends from tomatoes. Cut crosswise in half. Arrange cut sides up in circle in microwavable pie plate.

Salt and pepper tomatoes. Cover with waxed paper and microwave on high 2 minutes. Rotate plate ½ turn.

Mix remaining ingredients. Sprinkle mixture over tomatoes. Re-cover and microwave 2 minutes or until tomatoes are hot and cheese is melted.

Tip: If you like this recipe, try sprinkling healthy Hickory Smoked Shredded Buffalo Jerky in salads, on sandwiches, and in other quick microwave recipes that call for meat garnishes. Substitute the unhealthy processed meats you have to chop with healthy shredded jerky.
